We support local farmers and ranchers. Our cattle are raised by select producers in California, where they receive consistent, high-quality care. Cattle are transferred to Arizona, where they are finished on feed grown by local famers. By supporting our local community, we encourage sustainable agricultural production practices.

Grilled Showcase Natural Top Sirloin
with Garlicky Greens and White Cheddar-Bacon Cheese Fries

Main Ingredients
Cooking Directions
  • 2 Showcase Natural 9-ounce top sirloin steaks
  • 8 cups assorted greens: spinach, kale, escarole, etc.
  • 8 cloves garlic, sliced thinly
  • 4 Tablespoons olive oil
  • 4 small Russet or Yukon gold potatoes, washed, skin left on, cut into steak fries or wedges
  • 1 cup White Cheddar Cheese Sause (see below)
  • 4-ounce piece smoked slab bacon
  • 1 cup fresh mushrooms, sliced
  • 6-8 pieces garlic-chives, minced
    (available in Asian and specialty markets)
White Cheddar Cheese Sauce Ingredients
  • 1 Tablespoon rendered bacon fat
  • 2 Tablespoons all-purpose flour
  • 1½ cups bacon broth
  • 2 ounces grated cheddar cheese
  • 2 ounces grated jack cheese
  1. Heat frying oil in stove-top or electric deep fryer to 350 degrees. Preheat grill to hot.
  2. Put smoked bacon into a small sauce pot with water to cover and simmer gently for approximately 1 hour or until very tender. Remove and chill bacon. Once chilled, cut into slices, cook crispy and then chop roughly. Reserve 1½ cups bacon broth.
  3. Prepare cheese sauce by whisking flour into warm bacon fat over low heat in a small sauce pot. When combined, cook out briefly for 5 minutes. Whisk reserved bacon broth into the fat/flour mixture. Cook until it thickens and then whisk in cheeses to taste.
    Cheddar alone leaves sauce somewhat grainy. The jack cheese smooths it out. Add as much or as little as you like. Season with salt and keep warm.
  4. Season steaks with salt and pepper and grill 4-5 minutes per side until a thermometer reads 125 degress for medium-rare. Put steaks to rest.
  5. In a large sauté pan, brown the sliced garlic and add in the assorted mixed greens. Wilt the greens and season with salt and pepper.
  6. Prepare fries in deep fat fryer or by tossing with oil and roasting in a 375 degree oven until browned and tender.
  7. Arrange steaks on plates with garlicky greens and sasoned steak fries. Drizzle some warm cheese sauce over fries and then top with crumbled bacon and minced garlic-chives.
    Optional: top steaks with sautéed mushrooms.
